Shrimp Escabeche with Blood Orange Mojo


Shrimp Escabéche with Blood Orange Mojo

2c fresh blood o.j. or other o.j.,
1c fresh lemon juice
3 lg garlic cloves, minced, divided
pinch NTM salt
½ tsp crushed red pepper
2# cooked, deveined, peeled shrimp cut into ½” pcs
2c chopped red bell ppr
1 ½c chopped celery
1c chopped red onion
 ½c chopped fresh cilantro
Combine o.j. & lemon juice & 2 minced garlic cloves in med saucepan over med-high heat. Add pinch NTM salt, boil until mix is reduced to 1 cup. Cool. Mix in crushed red pepper.
Mix shrimp, bell pepper, celery, red onion, and cilantro in bowl. Toss with O.J. mixture and remaining minced garlic clove. Season with NTM Salt and pepper. Cover and chill until cold, about 2 hours.
