LIGHT SPINACH SOUFFLE

Ingredients:1 cup chopped cooked, drained spinach
2 TB chopped onion, cooked with the spinach
¼ cup cottage cheese (nonfat & if tolerated for optimal weight loss)
1 egg white, whipped
DIRECTIONS:
Mix spinach & onion with cottage cheese: fold in egg white. Pour into an ungreased small baking dish. Bake at 350 for 20 to 25 minutes. Season to taste after baking. Serves one & has about 105 calories & 0 grams of fat.
